Rivera Violante Castel del Monte DOC Nero di Troia 2022
The Violante di Rivera is a Nero di Troia created to enhance the purity of the fruit and the natural drinkability of this ancient Apulian grape variety. With this label, the winery sought to combine the typical aromatic intensity of Nero di Troia—with its characteristic hints of sweet violets—with a freshness and smoothness that make the wine extremely pleasant and versatile.
The grapes are harvested in the second ten days of October from vineyards located at 200-230 meters above sea level on calcareous soils. Vinification involves 8-10 days of maceration in stainless steel at 25°C, using délestage and micro-oxygenation techniques to extract color and aromas while maintaining a fine, velvety tannin structure. The wine ages for 12 months in glass-lined concrete tanks and ages for a further 3 months in the bottle before being released.

- Appearance: Intense, clear, and lively purplish-red color.
- Aroma: Intense and fresh bouquet, dominated by notes of ripe red berries and typical varietal aromas of violet.
- On the Palate: Juicy, full, and with excellent freshness. The balance between the fruit's pulp and the wine's structure makes it a satisfying and dynamic sip.
Recommended Pairings and Serving Suggestion
Its extreme pleasantness makes it an excellent companion throughout the meal:
- First and Second Courses: Ideal with flavorful soups, first courses with meat sauce, and second courses featuring roasted or stewed meats.
- Serving on its own: Due to its balanced and fresh characteristics, Violante is also magnificently enjoyed on its own, between meals.
- Serving Suggestion: We recommend serving at cellar temperature (16 - 18°C) to best enhance the delicate aromas.
