Why the winemaker recommends Tenuta il Canovino Quarto Vecchio Ripasso Valpolicella Superiore DOC
A super refined Review, done with dignity, without defects. Lots of metal and blood, ripe plums and chocolate, tobacco in the finish. He may be too direct and rude, but overall he is an interesting specimen.
Characteristics of the Quarto Vecchio Ripasso Superiore red wine from Tenuta il Canovino
Great berry symphony, a rather rare wine that has much more taste for the palate than for the nose, common in smelling, brilliant in sipping. Lots of cherry juice on the palate, as if it's not a wine, it's just a juice. Cherry, metal, leather, cranberry. Medium acidity; medium body; soft tannins.
Recommended pairings with Ripasso Valpolicella Superiore DOC wine
Perfect with structured first courses rich in flavors from every region of Italy.
Uncork and decant a Ripasso Valpolicella Superiore before serving it at a temperature of 18 - 20°C in large balloon glasses.
Il Canovino winery
10 hectares in Canova, on the hills of Mizzole, a small corner of paradise is born: vineyards kissed by the sun, designed by the elegant geometries of the vines like a garden overlooking Verona. Each plant is carefully looked after, the grapes are carefully selected, and the dedication continues during every phase, from drying to pressing, from fermentation to refinement in underground cellars, in Slavonian oak barrels. Thus the Quarto Vecchio line was born
