Why the winemaker recommends Paternoster Aglianico del Vulture DOC Rotondo
I love bottles of Aglianico del Vulture DOC Rotondo that have rested in the cellar for at least a decade because only beyond this limit are the tertiary characteristics appreciated. This historic cellar for Vulture produces this wine in the Rotondo area, practically a Cru. The top of the range remains the award-winning Don Anselmo. This Rotondo has a no-nonsense label, a sketch of the estate and the name with the year.
Characteristics of the Rotondo di Paternoster wine
Paternoster Rotondo Aglianico del Vulture DOC vinified in steel, while the malolactic fermentation is carried out in oak barrels for 14 months, before aging in the bottle for a further 12 months. The color is an intense ruby red with purple reflections. The nose shows a harmonious bouquet characterized by aromas of red fruits, spices and tobacco. In the mouth it enters soft, round and warm, with hints of raspberry, licorice and spices. Excellent long finish with growing tannins.
Recommended pairings with Aglianico del Vulture DOC wine
Rotondo Aglianico del Vulture DOC Paternoster to be paired with stewed red meats and dishes rich in flavors from every region of Italy. Alone, after finishing the meal, perhaps with dried fruit.
Uncork and decant Rotondo Aglianico del Vulture one / two hours before serving at a temperature of 16 - 18 ° C in large balloon glasses.
