The winemaker recommends Barolo DOCG Bric del Fiasc
Leaving this vineyard last del Fiasco begins the modern history of the Scavino family. Vineyard that draws nobility and power from the land where it was born, here the Nebbiolo grapes were always the best. In 1978 the young Enrico convinced his father Paolo to make them on their own and the first cru was born, still today the most loved, the austere and fascinating king of the Scavino household. To date it has incredible potential, in a decade or more it will give priceless emotions.
Characteristics of the Nebbiolo di Barolo wine:
It is always an emotion when you approach certain "sacred" bottles .... It takes a while to open, despite the 4 hours that have passed since the opening, but then it is a riot of perfumes, with notes of ripe fruit and violet, from balsamic to vegetal notes, then again mint and cinchona and tobacco and leather. In the mouth it is enveloping rich and opulent. An experience to share!
Suggested pairings with Nebbiolo di Barolo wine:
Excellent Barolo DOCG Bric del Fiasc Paolo Scavino with beef fillet.
Uncork Barolo DOCG Bric del Fiasc Paolo Scavino and decant many hours before serving at a temperature of 18-20° C in a large Ballon glass.
Paolo Scavino Cellar:
... 1921 in Barolo in Castiglione Falletto. Farmers lent to agriculture for a hundred years, a true family passion. Errico Scavino, heir, began to follow in the footsteps of the founders as a young man.
