Why I suggest Carlin de Paolo Cisterna d'Asti superiore DOC 2023
Small and unknown DOC: Cisterna d'Asti. Unpopular local red grapes: Croatina. Afternoon aperitif accompanied very well salami and pretzels. Intense ruby red, lively. Young, fresh, easy to drink. Little olfactory complexity but all in all a good product.
Sensory Profile
100% Croatina (or Bonarda), this is only found in Italy. This is very dense and well integrated with the flavors of plum, blackberry with the finish that shows thick designer tannins. I see blackberry in many red wines, but the aromatic profile changes when combined with other flavors. In this case, it almost tastes like figs. Sticky, liquorice flavor / liquorice flavors complete the back end, making me want more!

Aged cheeses, red meats and first courses of substance.
Uncork serving at a temperature of 18-20 ° C, in a wide Ballon glass.
