Description

The Mediterranean Freshness and Vibrant Soul of Coastal Syrah

Insoglio del Cinghiale from Campo di Sasso is the most lively calling card of Tenuta di Biserno. This Toscana Rosso IGT was born from the need to offer a modern wine, where the brilliance of the fruit and the typical spiciness of Syrah meet in a sip of extraordinary smoothness. It is the premier choice for those seeking a red with character, capable of telling the Mediterranean soul and freshness of the Upper Maremma in every glass.

The Cellar Protocol and the Enhancement of Fragrance

The winemaking of this specific label is aimed at enhancing the crisp component of the fruit, preserving its most volatile aromatic notes intact. The fresh and selected grapes undergo gentle pressing, followed by fermentation in stainless steel tanks at controlled temperatures. A portion of the mass subsequently matures for about 4 months in second-passage French oak barriques, while the remaining part refines in steel. This technical choice allows the structure to be enriched without overpowering the drinkability with sweet wood hints, guaranteeing superb aromatic stability and a fine tannic texture free of alcoholic harshness.

Characteristics of the Tuscany Red Wine

This refined blend expresses the quintessence of the coastal Tuscan territory in the glass, elevating varietal traits to a superior level of clarity. The stylistic architecture of this blend sees the leadership of Syrah, capable of delivering a vibrant spiciness to the classic structure of Cabernet and Merlot among the vineyards of the Upper Maremma.

  • Alcohol Content and Blend: 14.00% Vol. / Syrah, Cabernet Franc, Merlot, Cabernet Sauvignon.
  • Visual Examination: Bright ruby red color, characterized by splendid youthful and brilliant purple reflections in the glass that anticipate its beautiful freshness.
  • Olfactory Profile: A clean, intense, and complex bouquet. On the nose, fresh hints of wild berries and sweet spices stand out, magnificently enriched by herbal notes typical of the coastal Mediterranean scrub.
  • Palate: With a soft, enveloping, and medium-bodied structure, the wine presents itself with a mouth entry of total cleanliness and volume. The palatal progression reveals a fine and perfectly fused tannic texture, supported by a dynamic freshness that extends the sip without ever tiring. The sip develops austere and persuasive, guiding the tasting towards a refined fruity persistence in the finish and a clean retro-olfactory closure.

Pairings and Service

The aromatic nature of this selection requires accurate gastronomic pairings, capable of dialoguing with the fineness of the sensory profile.

  • Land Gastronomy: Pairs magnificently with mixed grills, veal scottiglia, roast pork, pappardelle with wild boar, traditional stews, first courses dressed with meat ragù or porcini mushrooms. Also excellent with flavorful cured meats and medium-aged Tuscan pecorino cheeses.
  • Signature Pairings: For an original and fascinating contrast, try it together with semi-aged cheeses. If for your meals oriented to conviviality you are looking for the monumental structure of the same company's flagship line, we suggest discovering the complexity of this range by trying the Tuscan estates wine, an ideal alternative for the table. This brand represents a true benchmark for modern catering.
  • Service Conditions: The wine expresses itself at its maximum potential at a service temperature of 16 - 18°C to facilitate the development of the olfactory range and the relaxation of the tannins. A slight oxygenation in the bottle before service and the use of a large Bordeaux-style glass are recommended.

The Upper Maremma Terroir and the Campo di Sasso Philosophy

The production comes to life from vineyards cultivated on sandy and medium-textured soils rich in pebbles, located in the plain of Bibbona close to the Tyrrhenian coast. This unique microclimate benefits from constant marine breezes that mitigate summer heat and naturally protect the clusters from moisture. Under the technical management of Tenuta di Biserno, the Campo di Sasso philosophy combines international agronomic precision with respect for local traditions.
