The Cellar Protocol and the Enhancement of Fragrance
The winemaking of this specific label is aimed at enhancing the crisp component of the fruit, preserving its most volatile aromatic notes intact. The fresh and selected grapes undergo gentle pressing, followed by fermentation in stainless steel tanks at controlled temperatures. A portion of the mass subsequently matures for about 4 months in second-passage French oak barriques, while the remaining part refines in steel. This technical choice allows the structure to be enriched without overpowering the drinkability with sweet wood hints, guaranteeing superb aromatic stability and a fine tannic texture free of alcoholic harshness.
