This rosé wine is born on the volcanic soils of Mount Etna, among the traditional dry-stone walls of the volcano. It is a selection tailored for those who love fresh aromas and seek the finest Sicilian wines for collection. On the palate, it immediately stands out for a vibrant saline note that recalls the minerality typical of volcanic sand. The grapes are hand-harvested to preserve maximum quality and create a unique product, perfect for those wishing to taste a high-territorial character Sicilian rosé wine. High-Altitude Vineyards on the Northern Slope and the Volcanic Microclimate

The vine rows rest on the light, black sands of Rovittello, on Mount Etna's northern slope, at an altitude of approximately 900 meters above sea level. This specific mountain terroir is swept by alpine currents causing sharp day-and-night temperature excursions, critical for fixing primary aromas of extraordinary finesse within the clusters. Natural ventilation descending from the volcanic massif constantly dries the vine canopy, preventing the onset of moisture and vineyard diseases. This extreme ecosystem endows the reference with a vibrant, avant-garde freshness, perfect for contemporary catering seeking a taut, sharp expression.

The Vinification of the Blend on the Volcano

The oenological protocol for the Erse Rosato line strictly excludes the use of wood to preserve the primary varietal transparency of the fruit. The process involves a very gentle pressing of the grapes and a very short cold maceration in stainless steel tanks at controlled temperatures, isolating the most noble and elegant must fractions. The nectar subsequently refines for approximately six months on its fine lees in stainless steel, completing colloidal stability and enhancing a natural chalky acidity before bottling.
