Terroir and Vineyard Sourcing of Langhe DOC Nebbiolo
The Langhe DOC Nebbiolo from Cordero di Montezemolo captures the freshest, most vibrant, and fruit-forward red wine expression of the prestigious variety. This selection is sourced from a deliberate agronomical blend combining fruit from estate vineyards in Alba and Cherasco with young vines under 8 years of age located within the top-tier Barolo crus of La Morra. Hand-harvested and vinified separately, these younger vine lots are classified to craft a streamlined Nebbiolo focused on varietal fragrance and fluid framework, bypassing the heavy tannic restriction of long-aged releases.
Technical Cellar Notes: Soft Extraction and Stainless Steel Handling
The cellar operations follow a non-interventionist protocol tailored to protect high-toned floral notes and crisp mid-palate tension. Fermentation is managed under cooler temperatures compared to Barolo standards, strictly shortening the skin-contact maceration cycle. Incorporating a calculated fraction of whole uncrushed berries during the active fermentative stage inside stainless steel tanks allows for a velvety polyphenol extraction, preserving primary fruit character. The wine undergoes natural cold stabilization, intentionally avoiding oak contact to fully safeguard its youthful identity.
Sensory Profile of Langhe Nebbiolo
The soil and climate conditions of the different parcels and the work carried out exclusively in steel give this famous Piedmontese red a clear organoleptic precision and marked agility.
- Appellation, Blend and ABV: 100% Nebbiolo / Langhe DOC / 14.00% ABV.
- Visual Presentation: Luminous ruby red color displaying clear, pale garnet transparency typical of traditionally crafted youthful Nebbiolo.
- Aromatic Bouquet: Fragrant and clean nose, showcasing dominant notes of fresh raspberry, wild strawberries, and elegant floral undertones of violet and rosehip.
- Palate Texture: Dry, crisp, and remarkably fluid on the entry. The mid-palate delivers a balanced texture where fine, soft tannins merge seamlessly with an integrated structure, concluding with a refreshing, precise finish.
Food Pairings and Serving Recommendations
The natural balance and structural freshness of this Langhe Nebbiolo support outstanding versatility throughout the entire meal.
- Classic Pairings: Serves as an ideal match for traditional land-based appetizers, cured meat platters, savory pasta options with ragù reductions, and beef carpaccio. Its structural agility also makes it an excellent partner for rich fish courses, such as savory seafood stews or seared grilled tuna.
- Serving Conditions: To highlight its refreshing character and lively red fruit profile, serve at a steady temperature of 16-18°C.
