The 2021 Barolo from Cantina Carlin de Paolo is delicious, quite traditional and tastes like it should. After opening the bottle, it reminds me of the scent of the smoothness of the clouds in the sky, just like being in the clouds. It's fun, generally fantastic.
Barolo Sensory Profile
Barolo 2021 is a rich wine in its translucent ruby color. The aroma does not reveal itself immediately, you have to give it a little breather. Notes of red berries, cherry, currant, vanilla, violet, oak, black cherry, pomegranate. In the mouth quite powerful, but already with rounded tannins, pleasant long aftertaste. It can improve with time, now it is already quite balanced.
Recommended Pairings and Serving Guidelines
Barolo DOCG indicated on beef medallion with grilled polenta, Risotto with mushrooms, with truffle. Fresh pasta and tomato ragù, cheeses with intense flavors: Toma, Sardinian pecorino with celery and black olives.
Uncork and decant before serving at a temperature of 18 - 20 ° C in a large Ballon glass.
