Why I suggest Brunello di Montalcino D.O.C.G. Riserva 2012
Production area of Bolgheri, San Polo and Montluc, The harvest carried out in weather conditions ideal allowed to complete maturation. The vintage is being heralded as one of the best vintages ever able to stand for great balance and elegance.
The Sommelier: The grapes are 100% Sangiovese, has produced a wine of ruby red colour with shades of garnet and very good alcohol content, 14.40% vol. Excellent wine is aged in large barrels. It is the fragrance of violets and red fruits of the forest with a light note of coffee. In the mouth, warm and full-bodied, soft tannins and well-defined, good persistence in the finish.
Food pairings: Excellent wine to grilled meats and roasts. Perfect with the classic fiorentina steak, the platter of prosciutto di Parma and culatello di Zibello, mature cheeses, Parmigiano Reggiano, Pecorino Sardo, scamorza di bufala-smoked also with fish dishes such as baccalà alla livornese.
Uncork and decant one hour before serving at a temperature 16 - 18 °C. in the cup Ballon large.
