The Clay Archetype and Ancestral Viticulture Philosophy of Petruna in Anfora
The Petruna Valdarno di Sopra DOC in Anfora from the Il Borro estate stands as a landmark of winemaking archaeology and regenerative organic viticulture. This pure Sangiovese completely excludes the use of oak barrels or stainless steel for its aging, conducting its full evolutionary cycle inside traditional Tuscan terracotta amphorae. The technical core of this project centers on the natural porosity of the clay vessels, which ensures constant oxygen interaction and dynamic, monitored micro-oxygenation. This ancient workflow protects the primary varietal purity of the grape, turning the fruit into a dry red wine of exceptional structural precision and deep mineral density.
Climatic Sourcing of the 2020 Vintage and Technical Clay Processing
The 2020 vegetative cycle was marked by an early, warm spring with ideal sun distribution, followed by a well-ventilated June with regular rainfall that built vital underground water reserves. The summer recorded significant thermal peaks, beautifully counterbalanced by sharp day-to-night temperature changes that protected the integrity of organic acids within the berries. Selective hand-harvesting targeted peak operational windows to guarantee pristine grape health. In the cellar, the must undergoes an extended 12-month skin-contact maceration directly inside the terracotta jars, naturally stabilizing the polyphenol architecture without any wood contact.
Profilo sensoriale del Petruna Valdarno di Sopra DOC Il Borro
The exclusive synergy between Tuscan terracotta and pure Sangiovese shapes a clean organoleptic identity marked by precise tactile refinement and tertiary depth.
- Appellation, Blend, and ABV: 100% Sangiovese / Valdarno di Sopra DOC / 14.30% ABV / Volume: 750 ml / Certified Organic / Vinified, fermented, and aged for 12 months on the skins exclusively inside terracotta amphorae.
- Visual Presentation: Luminous and clear ruby red color displaying warm orange and garnet reflections along the rim, highlighting its controlled oxidative maturation pathway.
- Aromatic Bouquet: Broad, deep, and highly complex on the nose. Clean notes of dried cherry, dehydrated plum, and blood orange unfold, layered with refined undertones of baked clay, fine spices, subtle mineral ematic notes, humus, and botanical traces.
- Palate Texture: Dry, vertical, and exceptionally fluid on the entry. The mid-palate delivers a streamlined, medium-bodied framework where a vibrant integrated acidity perfectly mouth-waters the palate. The tannic weave is polished and silky, smoothed by the clay vessel resting, leading into a persistent, savory finish.
Food Pairings and Serving Recommendations
The structural freshness, polished tannic weave, and rich salinity of this amphora-aged Sangiovese support outstanding versatility across savory land-based dining and high-end gastronomy.
- Roasted Meats and Grills: Pairs naturally and with absolute elegance with grilled red meats, traditional Tuscan pot roasts, and rich stews based on lamb or veal.
- Rich Soups and Blue Cheese: Offers an ideal match for hearty legume and spelt soups, wild porcini stews, and a select choice of long-aged hard pecorino or intense blue cheeses.
- Serving Conditions: To ensure accurate structural balance and allow the complex tertiary layers to unfold completely, use a wide Bordeaux glass and serve at a steady chilled temperature of 16 - 18°C.
