Why I suggest Rosso di Montalcino 2020
A lighter body, a lower and less mature tannin than their Brunello, but very pleasant and easy to drink. Brought to cellar temperature and left to breathe he accompanied us during a nice embers, beautiful aromas that remain persistent excellent value for money to buy for the stock in the cellar.
The Sommelier: Medium intensity ruby red. Intense nose, morello cherry, raspberry, moist undergrowth, ethereal, eucalyptus, mint, violet, acacia flower, butter biscuit, fireplace. Wide mouth with good softness, round and soft, medium length and concentration, thick and crunchy tannins .... a beautiful red from the Montalcino Sud area
Suggested pairings: Pappardelle with wild boar, carbonara; Spring rolls; caponata Siciliana; parmigiana, products from the vegetable garden in oil; vegetables with and without pasta; hard cheeses, especially sheep, to be tasted with scaldatelli taralli from Foggia and the Bella di Cerignola olives.
Uncork and decant before serving at 18-20 ° C in a large Ballon glass.
Winer Cellar: Sangiovese and Ciliegiolo vineyards surrounded by splendid centuries-old olive trees, working in first person, working for the environment and respecting practicing organic agriculture ...
