Why the oenologist recommends Carpineto Appodiato di Gaville Sillano 2001 IGT
Sangiovese and Cabernet Sauvignon of excellent climatic vintage, an exceptional wine suitable to be stored for long periods of aging. Healthy grapes with optimal analytical characteristics, and the must reached a good concentration of sugars placed to make wine leaving the grapes to a long maceration for about 18 days. The complexity of this wine derives from a maturation that took place for ten months of cask and subsequently bottled for many months. Today it is full-bodied, an intense color and aromas of fruit.
Characteristics of the Cabernet Sangiovese wine:
At sight in the glass the color is deep red, with showy and consistent arches. Excellent structure and vinosity, evolving aromas; taste of ripe fruit. Soft tannin, an almost silky, velvety attack. Full taste, robust, and satisfactory alcohol content with 13.50% vol.ci leaves with a long persistence in the finish.
Recommended pairings with Cabernet Sangiovese wine:
Appetizers of vegetables in oil even if spicy, Porchetta, caciocavallo podolico of Monte Sant'Angelo. Grilled polenta and red radicchio trevigiano grilled with the sliced Argentinian beef. Baked mushrooms with potatoes, stewed turnip tops and crumbled sausage; vegetable cardoncelle lamb meat and eggs, roasted artichokes.
