Why I suggest Appodiato di Gaville Sillano 2000 IGT
A production of Sangiovese and Cabernet Sauvignon from small plots of vines planted in San Chirico di Sillano, an excellent climatic year that has favored an exceptional wine suitable to be preserved and enjoyed after long periods of aging. Grapes harvested by hand in mid-October, only when the analytical characteristics of the must have reached an excellent gradation in sugars and with a vinification, leaving the grapes to macerate for 15 days. The complex aging of the wine took place in the bottle in 45 months, it presents a full-bodied wine with an intense color and intoxicating fruit scents.
Sommelier:
At the sight poured into the decanter, the color appears an intense red, limpid and in the glass garnet reflections. Structure and vinosity alternate together with the evolving aromas; taste of ripe fruit. Tannino has become velvety in the very long period of aging in bottle. Rich taste full and robust, with an excellent vinous attack leaves us with a persistence in the final.
Recommended pairings:
Perfect with polenta, grilled red radicchio from Treviso and grilled Argentinian beef. Baked cardoncelli mushrooms with yellow paste potatoes, cabbage stew and pig's foot; vegetable cardoncelle meat of lamb and eggs, antipasti of vegetables in oil even if spicy, cheese caciocavallo podolico of Monte Sant'Angelo.
Uncork and decant before serving at 18 ° C. in ballon wide chalice.
