Why the oenologist recommends Carpineto Appodiato di Gaville Sillano 1999 IGT
The production of Sangiovese and Cabernet Sauvignon grapes from small plots of vineyard owned planted in San Chirico in Sillano (XI century), in Figline Valdarno, a wine with particularly exceptional characteristics that can be kept for long periods of aging. The grapes are harvested by hand in mid-October, when the analytical characteristics of the must have reached an excellent gradation in sugars 23.50% with a long vinification, leaving the grapes to macerate for 15 days. The aging in the bottle gives us an amaranth color and intoxicating aromas
Characteristics of the Cabernet Sangiovese wine:
At the sight poured into the decanter the color appears of an intense red, limpid and in the calyx garnet reflections stand out. Great vinosity and evolving aromas; taste of ripe fruit. The presence of tannin has faded and made velvety to the touch. Sturdy wine full of flavor rich in extract with every sip, an excellent vinous attack leaves us with a long persistence in the finish.
