Why I suggest Barolo DOCG Novantesimo 2011
After a year of application on the nebbiolo, to celebrate I could only opt for a great Barolo. The choice falls on Enrico Scavino, bulwark of Castiglione Falletto. Gentleman winemaker among the pulsating souls of the Barolo Boys, but in the end it would be an understatement as well as unfair to mention it only by virtue of this label. There is no doubt that he is considered one of the pioneers in the experimentation of the barrique, for him the choice of olfactory cleanliness and color integrity.
Sommelier:
Dark red with tawny edges. Intense nose aroma. Dark ripe fruit with a pleasant forest and earthy aroma. On the palate, an intense, full-bodied wine. Black fruits are still present but the earth, tobacco and cedar arrive. A certain herbal / spicy note. And a very long ending. What wine !!!
Suggested pairings:
Excellent Barolo DOCG Novantesimo 2011 Paolo Scavino larded pheasant stuffed with sausage.
Uncork and decant Barolo DOCG Novantesimo 2011 Paolo Scavino many hours before serving at 18 - 19 ° C in a large Ballon glass.
