Why I suggest Palàs Barolo DOCG
Michele Chiarlo has a precise idea of wine: large bottles are born of meticulous and constant attention to every aspect of winemaking. Choices that favor the vocation, the historicity, the prestige of the places suited to the vine. Which result in the decision to vinify only native vines, using the iconic and historical varieties of Piedmont: Nebbiolo, Barbera, Cortese and Moscato.
The Sommelier: Medium garnet color, on the nose, delicate scent of oak, wet earth, black currant, tobacco. The palate has more cherry / dusty plum with a thick leather. The tannins are gravelly but easy-going and refreshing due to the acidity. Missing halfway and long lasting, fun to drink wine.
Recommended pairings: game, red meat; vegetable first courses with lamb meat; cabbage stew and pork foot; Meat chops better if with spicy; Donkey stew, good with the Neapolitan casatiello.
Uncork and decant an hour before serving at a temperature of 16-18 ° C, in a large Ballon glass.
