A rather original Valpolicella Classico, which aims more at elegance than intensity. Vanilla on the nose and a sulphurous note from volcanic soil. On the palate it is not very tannic and aggressive, a little mineral, with a light note of spice and good acidity. An honest and pleasant wine!

Paired to accompany appetizers and first courses. Not very full-bodied for pairing with robust second courses. Perfect with tagliatelle with pork ragout; grilled Treviso red radicchio with roasted polenta and salamella.
Uncork and decant before serving at a temperature of 16 - 18°C in a large Ballon glass.
