Why the winemaker recommends Vietti Barolo DOCG Castiglione 2019

Vineyards over 45 years old are used, no filtration and clarifications. Vegan certified; it is difficult to think that such a long-lived Barolo DOCG wine could surprise with its brilliance and liveliness. Everything in balance, everything in its place. Right acidity as opposed to flavor. Just the right tannin, not bulky but which defines it and marks it with its peculiarities. It is difficult to define the smells that follow one another as it remains in the glass. But it's also really difficult to make it stay in the glass. Wine to be left in the cellar for 10 years or more.

Characteristics of the Barolo Castiglione di Vietti wine

Vietti Castiglione Barolo represents the "Base", the cellar collects the grapes from the various areas of the property, vinifies them separately and then assembles them. The wine presents a classic ruby with garnet reflections on the nose and is intense with an ethereal elegance. Hints of dried roses and violets, red fruits, sweet liquorice, tobacco, leather, spices and undergrowth make up a complex, fine and persistent bouquet. The Barolo Castiglione di Vietti wine is warm, tasty and has a good structure in the mouth. The tannin is present and not bulky but defines it and marks it with its peculiarities.

Recommended pairings for this Barolo DOCG 2019 red wine

Castiglione Barolo DOCG wine, excellent accompaniment to roast veal, stewed wild boar, lentils with cotechino, cabbage soup with zampino.

Uncork and serve at a temperature of 18°-20°C in a large Ballon glass.
