Why the winemaker recommends Ciavolich Pecorino Colline Pescaresi IGP Fosso Cancelli 2021
Naturally fermented Pecorino, the latest arrival in the Ciavolich house for the selection line (only 3000 bottles) and it shows a great reinterpretation of the Abruzzo Pecorino. The must passes into French oak tonneaux where the pied de cuve of the same grapes is added. The refinement takes place in Slovenian oak barrels and passes into amphora. You have to wait for it to express itself in all its complexity and the temperature must not be too low. Intense scents of elderberry, honey, peach, almonds, yellow flowers.
Characteristics of the Fosso Cancelli di Ciavolich white wine
Pecorino wine “Fosso Cancelli” is decidedly interesting, it has a great character and a beautiful golden yellow color. Unfiltered, aged for 24 months in barrique. It makes itself felt with elderflower, sage, white pulp fruit and a slight hint of ginger. In the mouth it is quite warm (13.5% vol.), structured, balance between softness and flavor and freshness. After swallowing, a pleasant aroma of propolis returns. Persistent.
Recommended pairings with Fosso Cancelli Pecorino Colline Pescaresi PGI wine
Ideal with linguine with clams; extraordinary with poor fish soup; preferable with roasted artichokes or green bean soup in cherry tomato sauce.
