Why the winemaker recommends Ciavolich Fosso Cancelli Trebbiano d'Abruzzo
The Ciavolich Trebbiano d'Abruzzo Fosso Cancelli awakens the senses with a saline minerality and fruity and stone fruit on the palate. From the oldest vineyards on the estate, the wine is aged in oak and terracotta amphorae before bottling. Buy some bottles and leave them in the cellar for a few years... extraordinary result. After 4 years a wine that is still fresh, fragrant and with a lively and brilliant colour. Really large bouquet. I will leave a bottle in the cellar for a while longer.
Characteristics of the Fosso Cancelli di Ciavolich white wine
Trebbiano d'Abruzzo with natural fermentation, with passage in large barrels. Intense aroma, full of flowers and fresh grass. On the palate it has a good structure and retains the intensity anticipated on the nose.
Recommended pairings with Fosso Cancelli Trebbiano d'Abruzzo wine
Very versatile Trebbiano wine, it perfectly accompanies a mixture of raw seafood; lobster-burrata-ham broth tortelli; amberjack; black olives and aubergine caponata.
Uncork the Fosso Cancelli Trebbiano d'Abruzzo wine, I recommend serving at a temperature of 14 - 16 degrees in a large Tulipano glass.
Ciavolich winery
Among the rows of vineyards we come across succulent and golden bunches of Trebbiano, Cococciola, Pecorino, Chardonnay, Moscato, Passerina, and red grapes that have great resonance in the international wine world, Montepulciano d'Abruzzo. They accompany the wines and bottles with labels that well represent the territory such as: Fosso Cancelli, Antrum, Divus Montepulciano D'Abruzzo Doc, Aries Pecorino, Donna Ernestina Passerina Spumante Brut.
