The winemaker recommends Falanghina Le Fossette Brut Alberto Longo
Charmat method sparkling wine aged 6 months on the lees, surprising for its great freshness, due to the skilful elaboration of the Falanghina which also in Puglia offers remarkable products. Personally I paired it with medium-aged Apulian cheeses such as caciocavallo and cow's milk caciotta, their fatness was perfectly balanced by the acidity of the sparkling wine.
Characteristics of Falanghina wine:
Le Fossette Brut Alberto Longo Masseria Celentano San Severo DOC, clayey limestone soil. Pale straw yellow, barely perceptible froth, very fine and present perlage. Very subtle, floral, fine nose. On the palate it is delicate and balanced, the bubble is very present without being annoying, thanks to its finesse, and the acidity is good. Delicate without being inconsistent.
Recommended combinations:
Perfect taste with raw fish and fish first courses in general. Grilled white meats; Caciocavallo and cow's milk caciotta, smoked buffalo mozzarella.
Uncork Spumate Le Fossette Brut and serve at a temperature of 12 - 13 ° C, in a Tulipano glass.

The winery is surrounded by vineyards with vines of Bombino Bianco, Falanghina, Montepulciano and Nero di Troia from the Cavalli farm, the only variety for the production of the famous Cacc 'e Mitte Lucera DOC wine.
