Why I recommend Chiaromonte Ancestrale Brut Metodo Classico 2019
Alongside the old sapling vines we find new espalier plants of Chardonnay alongside the Fiano Minutolo, the aromatic variety for the production of high quality aromatic wines recognized nationally and international. All the grapes belonging to the Chiaromonte Ancestrale blend retain particular different organoleptic characteristics. The stratified minerality of the earth yields to the gustatory component, the polyphenolic charge, the coloring pigments and in addition a significant amount in percentage of sugary substance, give rise to wines of high alcohol content, a fundamental characteristic for conservation and aging.
Sommelier:
A perfect blend of Chardonnay and Fiano Minutolo combines with the very low temperatures of the first fermentation. An ascension of golden yellow bubbles let emerge intense and fragrant aromatic scents of spring fruits. The fresh and dry flavor is appreciated, which is masterfully enhanced. Balanced wine with good persistence.

Ancestral Spumante Chiaromonte Brut with a fabulous range of seafood: sea urchins, Mazzara prawns, pieces of sauteed tuna, oysters.
