Why the winemaker recommends Paitin Starda Nebbiolo Langhe DOC 2023
Nebbiolo Langhe which, as most people know, is a PDO derived from another PDO. To be precise, in this case from a ''Barbaresco'' Docg to a ''Nebbiolo Langhe'' DOC. I want to point out this ''etymology'' because it is a DOC that does not include 100% Nebbiolo but 85%. Difference not to be underestimated compared to ''Nebbiolo d'Alba''. There is a great balance in this wine. The taste is pure red fruit with a lively acidity that makes the wine alive with energy.
Characteristics of Paitin Starda Nebbiolo wine
This is a really bold and big wine, but in any case not sappy or overripe. In the glass it has a magenta heart with light tiling on the edge and some orange reflections. Classic Nebbiolo nose: undergrowth, orange peel, violet, crushed stone and tobacco. Medium to medium body, tannins that make the tongue feel like sandpaper and a long mineral finish. It has incredible value here and could last years in a cellar.

Starda Nebbiolo accompanies fresh tomato pasta; Wonderful on the pizza maker; sfriullo with fresh sausage with hanging cherry tomatoes; broad bean and chicory; cutting board with Parma ham and Parmigiano Reggiano.
Uncork and decant two hours before serving the Nebbiolo Langhe Starda at a temperature of 17 - 19°C in a Ballon glass.
