Why I recommend DOC Nebbiolo 2023
As usual, good wine is not made in the cellar, but in the vineyard”. Inviting characteristics of Nebbiolo that crave a Piedmontese dish. Young with chewy tannins that will soften with age but already shows signs of maturity. A "robust boy".
Barolo Sensory Profile
Intense dark red, it stops on the glass. The aroma is intense, of good complexity and elegance, floral with notes of violet, fruity with notes of blackberry and raspberry and spicy with notes of black pepper and coffee. The taste is dry, warm, soft, with a precise vinous flavor that creates softness, enhanced by the discreet presence of tannins.
Recommended Pairings and Serving Guidelines
DOC Nebbiolo with pappardelle with spicy pork ragù and then a lamb chop. Good accompaniment and light enough to drink before dinner, perhaps dipping Apulian scaldatelli.
Uncork and decant before serving at a temperature of 18 - 20 ° C in a large Ballon glass.
The Story of Carlin de Paolo Four Generations of Passion.
The winery's name is a proud tribute to its founder, grandfather Carlo (known as "Carlin"), Paolo's son. He blazed the trail, cultivating the first vineyards with a simple yet rigorous philosophy: listening to nature and following its rhythms. Today, the fourth generation of the family upholds this precious legacy, combining ancient knowledge with modern winemaking technologies to bring the purest expression of the Piedmont terroir to the glass.
