Why I recommend Monferrato DOC Dolcetto Wine
Dolcetto Monferrato DOC by Carlin de Paolo is a young, easy-drinking wine. Little olfactory complexity but all in all a good product.
Sensory Profile of Dolcetto wine
Delicate and elegant, smelling the Dolcetto Monferrato DOC wine makes you feel like you are sinking your nose into a lively bouquet of roses, peonies and geraniums, but not only that, the background is in fact fruity and spicy. On the palate it is subtle, again floral and fruity, tannic and lively.
Recommended Pairings and Serving Guidelines
Dolcetto wines on hearty first courses; red meats; aged cheeses;
Uncork red wine and serve at a temperature of 16 - 18°C, in a Ballon glass.
The Story of Carlin de Paolo Four Generations of Passion.
The winery's name is a proud tribute to its founder, grandfather Carlo (known as "Carlin"), Paolo's son. He blazed the trail, cultivating the first vineyards with a simple yet rigorous philosophy: listening to nature and following its rhythms. Today, the fourth generation of the family upholds this precious legacy, combining ancient knowledge with modern winemaking technologies to bring the purest expression of the Piedmont terroir to the glass.
