Why the winemaker recommends Grosjean Chardonnay Valle d'Aosta DOC 2023
Very fresh, sparkling and young wine, 100% Chardonnay '23 by Grosjean Valle d'Aosta. 15-30 year old vines at 600-700 m altitude. Fermentation and aging in stainless steel tanks. Excellent bouquet of fruits, very refreshing with a light body, pleasant, well balanced.
Characteristics of Grosjean Chardonnay wine
Mountain Chardonnay inspired by Burgundy. It has an intriguing nose that evolves in the glass from citrus and flowers to stone fruit, vanilla and aromatic herbs. The sip is juicy, pleasant and balanced between acidity and softness. Long finish with marked minerality. Vineyards planted at 800m, soft pressing with non-stemmed bunches, vinified in barrique where it remains in contact with its yeasts for 12 months. It deserves structured fish dishes or even white meats.
Recommended pairings for this Aosta Valley Chardonnay white wine
Fish appetizers, including raw ones; salmon sashimi; fried calamari; cod. Given the strong herbaceous note, the perfect combination with a mountain cheese matured in hay makes it best appreciated.
Serve at a temperature of 12 - 16°C in a large glass.
