Why the winemaker recommends Chardonnay Le Vin de Michel Valle d’Aoste DOC Grosjean
Chardonnay “Le Vin de Michel” is a white wine of great elegance and personality, which comes from the heart of the Vallée d’Aoste, in the municipality of Quart, from vineyards cultivated at 800 meters above sea level. The pedoclimatic characteristics of this area – southern exposure, soil of glacial origin with a prevalence of sand and a good skeleton component – give the wine freshness, aromatic complexity and extraordinary minerality.
Vinified exclusively from 100% Chardonnay grapes, harvested in the second ten days of September, the must is obtained by pressing the whole bunch and subsequent flotation, with fermentation carried out using selected yeasts. The refinement takes place in steam-bent “sur lie” barriques for 12 months, followed by 8 months in the bottle, to give the wine structure and depth.
The result is a wine with an intense and brilliant straw yellow color, with a broad and enveloping bouquet, which recalls the complex aromas of the great French Chardonnays. Notes of vanilla, melted butter, sweet spices and dairy scents emerge, on an intense floral base. On the palate it is fresh, balanced and deeply mineral, with a fine tannic texture that makes it persistent and harmonious.
Versatile in pairings, it accompanies with class international cuisine dishes: first and second courses based on fish, savory flans, white and red meats, cured meats and long-aged cheeses typical of the Alpine tradition.
