Why the winemaker recommends Dario Di Vaira Clarice Rosso Bolgheri DOC
As a basic Bolgheri there is little to say, really excellent, but be careful about the year, the difference in refinement, even though it is young, is noticeable. Like many wines, it should be bought and put in the cellar to then drink it when it is mature... obviously this never happens, a bit like New Year's resolutions.
Characteristics of the Clarice wine by Dario Di Vaira
Excellent for a young Bolgheri. On the nose it presents itself with a vegetal and vaguely smoky tone, almost mineral at times. Some sensations of vanilla join the background tone, mitigating it. Letting it breathe, more fruity fragrances emerge, but sedimented and deep. The impact is pleasant and intriguing. Expectations are high. In the mouth it does not betray: expressive, aggressive, decisive tannin; the personality is warm, precise, persistent. A very good wine, with great potential.
Suggested pairings for the red wine Toscana Bolgheri
A robust wine pairs perfectly with grilled Tuscan sausages; with lamb; good with brie.
Uncork and decant two hours before serving at a temperature of 18 - 20 °C in a large Balloon glass.
