Why I suggest Prefillossera Rosso Etna DOC
The soil on Etna saved some of the original vines in the 19th century when the Phylloxera swept away the European vines. Produced with 100% Nerello Mascalese grapes from 120-year-old vines with a yield of 25ql / ha and 1700 total bottles. Macerated for 6 months and aged for 2 years in large barrels. Interesting grapes in a bold territory.
The Sommelier: The mouth is smooth as silk with a medium weight but a flavor full of power intensity with a high acidity and tannins but with a great elegance and power with a great persistence in output and a super strong and long aftertaste. Wine with great aging potential.
Recommended pairings: Wine for vegetable first courses; caponata; Roasted artichokes; pecorino cheese.
