Why the winemaker recommends Castel Sallegg Vigna Bischofsleiten Alto Adige Lago di Caldaro DOC
If it is true that Schiava is a grape variety that expresses its potential mostly in South Tyrol, here is an example that gives an idea. An elegant wine that satisfies without weighing down the palate. Harmonious enough to be defined as harmonious.
Characteristics of Vigna Bischofsleiten Castel Sallegg
A fantastic Schiava that I put almost on the same level as Girlan's. Intense and complex nose. You can feel the rose, the wild strawberries, the cherries, there are vegetal notes and sweet spices (it doesn't make wood!) Fantastic nose, same palate. Full-bodied and with good balance (but it can wait a little longer). The center of the mouth is an explosion of raspberry and blood orange. Just a hint of tannin, but Schiava is like that. It closes fresh and persistent. What a wine!
Recommended pairings for this Trentino Alto Adige DOC red wine
An excellent red wine pairs well with a strong dish or an intense cheese. To be enjoyed with the Florentine steak.
Uncork and decant before serving at a temperature of 16 and 18 °C in a Balloon glass.
