Why the winemaker recommends Paitin Barbaresco Serraboella DOCG 2021
With a long submerged cap maceration, this Barbaresco Serraboella matures for 20 months in medium Slavonian oak barrels.
One of my favorites for elegance, structure, precision, complexity, enveloping. On the nose it's crazy, in the mouth it's full, astringent, ready to drink, well balanced, slightly bitter, it's absurdly drinkable. Congratulations, I will never get tired of drinking it.
Characteristics of Paitin Serraboella DOCG 2021 wine
For Barbaresco Serraboella, a particular year from a climatic point of view but the result is still excellent. Elegant wine, balanced with a pleasant balsamic hint and a strong acidity that gives freshness to the whole drink. The fruity trace is very intense and the structure is important. The nose alternates notes of medicinal herbs, seasoned wood, eucalyptus, black cherries and ash. On the palate it is vigorous with initial balsamic hints then accents of black undergrowth berries, plums and wood. Satisfying ending.
Recommended pairings for this Barbaresco DOCG Piemonte red wine
The Barbaresco Serraboella with roast fassona; a risotto and truffle; a flourish of hanging cherry tomatoes; broad bean and chicory; platter with Norcia cured meats and Parmigiano Reggiano.
Uncork and decant two hours before serving Barbaresco Serraboella at a temperature of 17 - 19°C in a Ballon glass.
