Why the winemaker recommends Caravaglio Malvasia delle Lipari Passito DOC
Malvasia delle Lipari Passito is much more than a sweet wine. It is the liquid memory of the Aeolian Islands, an oenological treasure that speaks of centuries of history, peasant toil, and passion. Once the regal wine of European courts, it risked oblivion in the 20th century due to phylloxera, emigration, and wars. Thanks to the tenacious work of producers like Antonino Caravaglio, this oenological masterpiece is today a symbol of rebirth and authenticity. The hand-picked grapes are laid on traditional cannizzi (reed racks) to dry in the September sun for 15-20 days, concentrating sugars, aromas, and the soul of the terroir.
Characteristics of the Malvasia Passito di Caravaglio wine
Made from 95% Malvasia delle Lipari and 5% Corinto Nero grapes, grown organically on terraced plots of Salina, where the mild climate, clean air, and volcanic soil create a perfect balance between nature and viticulture.
It is luminous with golden reflections and a crystalline texture. The rich and seductive bouquet features notes of dates, dried apricots, dried figs, raisins, honey, citrus peel, and vanilla with balsamic nuances. On the palate, it is delicately sweet but never cloying. A citrus freshness and a subtle marine flavor perfectly balance the sugar concentration. The finish is persistent, elegant, and aromatic, with Mediterranean nuances.
Recommended pairings for the Passito delle Lipari DOC wine
Perfect with dry pastries, almond biscuits, blue cheeses, liver pâté, or as a meditation wine at the end of a meal. Also ideal for special occasions or as a refined gift for lovers of signature sweet wines.
For a perfect tasting experience, we recommend serving Passito di Malvasia at 15°-16°C in a medium Tulipano glass.
