Why I suggest Raboso Piave DOC 2013
Cultivated in Veneto in the flat valley of the Piave perhaps owes its name to the angry reaction to the very acid and astringent impact that have both grapes and wine on the palate. Thick peels allow good resistance to diseases and rot. A careful and soft wine making and that Raboso could be the answer of the Veneto to Nebbiolo or Sangiovese.
Sommelier:
Vinified by only Raboso DOC Piave grapes, its long maturation allows it to be harvested late, obtaining a wine with an intense ruby red color and garnet reflections. Clear, bright and consistent wine with 13.50% vol. A winy scent, pleasant notes of marasca, aging, of ripe fruit. The taste is austere, well balanced, full-bodied, velvety with aging, the finish is persistent.
Recommended pairings:
Excellent on Polenta, Tortellini with meat sauce, Rabbit with hunter, Baked pork loin, game, Troccoli handmade with lamb sauce, medium and mature cheeses.
Uncork and allow to air before serving at 16 - 18 ° C. in big ballon chalice.
