Rivera Sauvignon Blanc Terre al Monte Castel del Monte DOC 2025
Rivera's Sauvignon Blanc "Terre al Monte" is the result of a winemaking challenge that began in the 1980s: transferring a transalpine variety to the Mediterranean climate of the Apulian Murgia, resulting in a white wine of extraordinary elegance. The winery offers a proud interpretation of the grape variety, enhancing its varietal characteristics through meticulous management that focuses on formal clarity, freshness, and a vibrant mineral energy.
The vineyards, located in Andria at 350 meters above sea level, are planted on rocky, calcareous soils that give the wine its typical savory character. Harvested between the first and second week of August, the grapes are vinified in stainless steel at 18°C. Unlike many other white wines, this Sauvignon undergoes malolactic fermentation and ages for 3-4 months on its fine lees, a process that enriches the aromatic profile, lending complexity, structure, and a persistence uncommon for this type.

- On the Palate: Fresh, rich, and fruity. The palate is balanced, supported by a pleasant acidity that enhances its structure and ensures a clean and persistent finish.
- Aging Potential: The complexity and structure allow for a successful evolution in the bottle for up to 3 years after harvest.

- Seafood: Excellent with seafood appetizers, fish dishes, shellfish, and raw fish.
- Vegetarian and White Dishes: Perfect with asparagus or artichoke omelettes, light vegetable soups, and delicate white meats.
- Serving Suggestion: Excellent as an aperitif. It is recommended to serve well chilled at a serving temperature of 8 - 10°C in a medium-sized glass.
