Rivera Marese Bombino Bianco Castel del Monte DOC
The Marese di Rivera is a pure interpretation of Bombino Bianco, a native grape whose distinctive personality the winery has successfully enhanced. Unlike many Southern white wines, the Marese focuses entirely on elegance, freshness, and a clean, expressive character. It is a highly balanced white wine, created for those seeking a wine capable of expressing the Murgia region without succumbing to excessive ripeness, maintaining a lively and vibrant palate.
The grapes come from spurred cordon-trained vineyards on deep, calcareous soils (180-200 meters above sea level) in the municipality of Andria. The harvest, carried out at full maturity in the last week of September, yields a rich aromatic profile, balanced by the grape's natural acidity. Vinification takes place in stainless steel at a controlled temperature (16-18°C), followed by two months of aging on the lees in glass-lined concrete vats. This process gives the wine its characteristic structure and an uncommon persistence for this type of wine.

- Appearance: Bright straw yellow with characteristic greenish reflections.
- Aroma: Intense and fresh aroma, dominated by fruity notes, particularly rennet apple, enriched with delicate floral nuances.
- On the Palate: Full-bodied, fresh, and fruity. The palate is well-balanced by a pleasant acidity that makes the sip harmonious, clean, and extremely drinkable.

Thanks to its pronounced freshness and the savory character typical of calcareous soils, Marese is an extremely versatile wine at the table:
- Appetizers and Raw Food: Ideal with raw seafood, cooked fish appetizers, and seafood.
- First Courses: It pairs perfectly with fish dishes, light vegetable soups, and traditional Apulian first courses.
- Serving Suggestion: To enhance its fresh notes and bouquet, it is recommended to serve at a serving temperature of 8 - 10°C in medium-sized glasses.
