Why I suggest Barolo DOCG Gramolere 2020
We are in Monforte d'Alba for this Barolo di Nebbiolo macerated for 30/40 days and aged for 30 months in large barrels and barrels of at least 500 liters. A wine of great interest, this Gramolere by Giovanni and Mauro Manzone is truly in a state of grace. Pure balance between still fruity notes and tannins present, but well nuanced. The wood is there, but in a discreet way for real. The wine fears a priceless lightness of drinking. To be enjoyed at a low temperature, perhaps many years later.
Sommelier:
Light garnet red color, intriguing nose with an initial cherry in alcohol which then leaves room for pepper spice and juicy black cherry fruit, then tobacco, violet, light balsamic and light toasted note. In the mouth it is full-bodied, warm + (14.5 °), not very soft, decidedly a lot of fresh medium tannic acidity, but with an elegant tannin, very persistent wine.
Suggested pairings:
Barolo DOCG Gramolere 2020 Manzone with florentine beef tagliata and Treviso red radicchio and grilled polenta; Tiella potatoes and mushrooms. Horse meat chops; Bari focaccia, Sardinian pecorino cheese, celery and fried olives.
Uncork Barolo DOCG Gramolere 2020 Manzone and decant before serving at 17 - 19 ° C, in a large Ballon glass.
