Why the winemaker recommends Broglia Derthona Colli Tortonesi Timorasso
As always, it is a challenge to give a precise description of this blend which, by definition, escapes the canonical parameters and represents something typically identifying. So the suggestion is to just drink it, appreciating its intrinsic qualities that make it, for my tastes, a great wine. This one in particular embodies well the sensory system that you expect from a Timorasso. A valid companion at the table.
Characteristics of the Derthona Timorasso wine by Broglia
Timorasso is a wonderfully gastronomic grape. On the nose, grapefruit bitters, lime and delicate flowers. A slightly waxy flavor, grapefruit again. Excellent consistency, oily bitters but which remain in a tight embrace with the citrus fruits, so it is never excessively sour. Good finish. A rather bold wine, the high alcohol content helps it, but it is not excessively evident in the taste.
Suggested pairings with Timorasso, the Piemonte white wine from Colli Tortonesi
The good acidity allows it to be paired with shellfish or simply drunk as an aperitif. A perfect match cacio e pepe; on carbonara; troccoli with cuttlefish.
Uncork and serve at a temperature of 12 - 14 °C in a Tulipano glass.
