Infatata Salina IGP Bianco Caravaglio
Infatata is the elegant expression of dry Malvasia di Lipari, grown in the heart of the island of Salina, from a vineyard overlooking the sea and embracing the wind. Produced by the organic winery Caravaglio Vini, this wine represents one of the most refined and enduring interpretations of dry vinified Malvasia, the first experiment of its kind in the Aeolian Islands, and awarded the Tre Bicchieri Gambero Rosso award.
The grapes come from a single and iconic plot, Tricoli, so named for its triangular shape. A northwest exposure and sandy volcanic soils give the wine aromatic depth, salinity, and natural freshness. Respect for nature is absolute: the cultivation is certified organic, the grapes are harvested by hand, and the vinification takes place exclusively with native yeasts at a controlled temperature, to preserve the wine's identity and terroir.
Tasting Notes
It displays a bright straw yellow color with greenish highlights. The nose is a journey: jasmine, apple, grapefruit, and aromatic herbs blend together in an elegant and enveloping bouquet. On the palate, it is bold and vertical, with evident salty notes, a sharp freshness, and a long finish that evokes the island's sea and sun.
Recommended pairings
Perfect with seafood appetizers, fried fish, sushi and sashimi, plain pasta dishes, seafood risottos, and even fresh cheeses or vegetarian dishes. Its structure also makes it an excellent accompaniment for the entire meal. Ideal serving temperature: 12–14°C.
