Occhio di Terra Salina IGP Bianco Macerato Caravaglio
Occhio di Terra is an extraordinary macerated white wine, the result of a bold and refined interpretation of Malvasia di Lipari vinified as a single varietal. Produced by the Caravaglio Winery, it is made from grapes grown using certified organic methods in the Malfa vineyards on the island of Salina, on plots overlooking the sea and caressed by the Mediterranean breeze.
Vinified with a long maceration on the skins—approximately 10 days in stainless steel—and subsequent malolactic fermentation, the wine rests on the fine lees for several months before bottling. This artisanal process, respectful of nature, yields a wine rich in personality, complex and territorial.
It presents an intense, brilliant, and luminous golden yellow. The nose is deep and intriguing: yellow peach, apricot, and citrus open the scene, followed by hints of Mediterranean herbs, white flowers, and a distinct saline note. The palate is enveloping and smooth, supported by a vibrant freshness and delicate tannins that provide structure and a velvety finish. A Malvasia that tastes of land and sea, capable of evolving gracefully over time.
Perfect with fish appetizers, raw and grilled seafood, swordfish, but also with vegetarian first courses, fresh cheeses, or savory pies. Ideal as a refined aperitif.
Serving temperature: 12–14°C.
