Why I suggest Merlot Collio DOC
Authentic Merlot DOC Collio Goriziano. The hot summer period has positively affected these hills of the estate, determining the maturation of the Merlot grape rachis, reducing in part the characteristic herbaceous aftertaste. Wines that see their progressive maturation in concrete tanks. The originality of the aroma, and possibly its characteristic defect for some, remains unchanged. The amplitude of the scents of tomato leaves and of the pepper fruit, harmonize with thick notes that guarantees its organoleptic quality.
The Sommelier: Ruby and crystalline red wine, with an alcoholic component of 13% Vol. On the nose fragrance of pepper and tomato leaves, cherry and currant fill the aromatic bouquet, bind the floral notes of tobacco, violet. The taste is very tasty, immediately hot and well-defined tannins, the finish is on average long.
Suggested pairings: Reginette alla puttanesca, matriciana, Cavatelli of flour burnt with mixed meat sauce, tagliatelle alla bolognese, pappardelle with pesto, Orecchiette with turnip tops, vegetable minestrone, aged cheeses, caciocavallo podolico, goat's cheese drunk .
