Why I suggestNonno Tòre Rosso Benevento IGP
The cellars of the past were subterranean, or dug into the tufaceous rock and equipped with an upper oculus for the exchange of air, the lighting of the rooms. The Aglianico grape, unloaded and pressed on a floor on the upper floor of the mill called palmento, was placed in tanks or containers below for fall. Works that have been easily modernized in the Simone Giacomo cellar without losing the winemaking tradition of the time, aiming at the sanitation of the places and more to the healthiness of the aglianico del Taburno wine.
Il Sommelier: Great quality of Aglianico grapes from Monte Taburno from Montesarchio in Campania. Healthy grapes without defects for a good vinification have produced genuine wine that does not require addition of sulphites. The Color, practically intense red, crystalline with excellent clarity. As soon as it is poured into the glass, you can still perceive vinous notes, it turns on a good flower and a light fruity touch. Fine perfume despite the little complexity. Savory, fresh, not tannic, persistent.
Recommended pairings: Wine for a meal with red meats; first courses of ziti with lamb sauce; stuffed pancetta with egg omelette and pieces of sauteed liver seasoned with black pepper and Sardinian pecorino cheese; semi-hard cheeses, bacon / lard and savory croutons; well with the Neapolitan casatiello.
Uncork and leave to air before serving at a temperature of 16-18 ° C, in a large Ballon glass.
