Michele Chiarlo has a precise idea of wine: great bottles are born from meticulous and constant attention to every aspect of winemaking. His choices that favor the vocation, the historicity, the prestige of the places suitable for the vine. Which materialize in the decision to vinify only native vines, using the iconic and historical varieties of Piedmont: Nebbiolo, Barbera, Cortese and Moscato.
Characteristics of Nebbiolo wine:
Michle Chiarlo's Nebbiolo Palas comes from a vineyard in the municipality of Barbaresco where the harvest takes place carefully and manually. The Nebbiolo Palas wine is aged for at least 18 months in oak barrels. Curled red color, scent of smoky aromas, fruit in alcohol, discreet woody notes, light oak with toasted hints. Taste of cherry liqueur with plum background; balsamic notes evolve towards a good balance.
Recommended pairings with Nebbiolo wine:
Nebbiolo Palàs Barbaresco DOCG 2019 Michele Chiarlo with game, red meat; vegetable first courses with lamb meat; cabbage stew and pig's foot; Meat chops better if spicy; Donkey stew, goes well with Neapolitan casatiello.
Uncork Palàs Barbaresco 2019 Michele Chiarlo and decant one hour before serving at a temperature of 16 - 18°C, in a large Ballon goblet.
