Palmento di Salina Salina PGI Caravaglio
Palmento di Salina is an unconventional red wine that expresses the ancient and authentic soul of the Aeolian Islands. Produced from Corinto Nero, Nerello Mascalese, Calabrese, and Perricone grapes, grown using certified organic methods in the historic vineyards of Salina and Lipari, this wine represents a perfect synthesis of tradition and contemporary interpretation.
The grapes, harvested by hand in mid-September, come from plots distributed between Lipari (volcanic soils, sand, and pumice) and Malfa-Salina (sandy, gravelly soils). After destemming, fermentation occurs spontaneously using only native yeasts, with a brief maceration on the skins for 2-3 days. Aged partly in stainless steel and partly in used barriques, on the fine lees for approximately 8 months. The wine undergoes neither filtration nor fining.
Tasting Notes
The color is a brilliant carmine red, with highlights reminiscent of the most intense rosés. The nose opens with a lively and varied bouquet: crisp red fruits, aromatic island herbs, and a hint of damp earth reminiscent of the volcanic soils. On the palate, it is fresh and savory, with excellent structure yet smooth, delicate tannins and a surprising persistence. The well-balanced acidity also suggests good aging potential.
Recommended Pairings
Versatile and regional, Palmento di Salina is ideal with meat-based appetizers, oily fish dishes, white meats, and even with fresh or slightly aged cheeses. It is also excellent served chilled in summer, as a wine to accompany any meal or as a structured aperitif. Recommended serving temperature: 12–14°C.
