The project evokes the style of everyday wines from the past produced in Aeolian "palmenti" winemaking structures, where short extraction encouraged the creation of agile, convivial, and highly versatile reds. Palmento di Salina stands out for its cross-functional nature, capable of combining the wild aromas of marine scrub with an extraordinary ease of drinking.

Volcanic Geometries and Non-Interventionist Cellar Protocol

The plots dedicated to this cuvée rest on differentiated sandy matrices: the rows located in Lipari benefit from soils rich in pumice and volcanic ash, while the vineyards of Malfa, on Salina island, insist on loose soils rich in stones. The manual harvest takes place in mid-September, selecting healthy clusters with a perfect acid balance. In the cellar, fermentation develops spontaneously through the exclusive action of indigenous yeasts, accompanied by a fleeting skin-contact maceration limited to just 48-72 hours. This measured contact avoids the extraction of harsh tannins and preserves a vibrant transparency. The mass matures for approximately 8 months, split between stainless steel tanks and used barriques, resting on the fine lees without undergoing any fining or filtration prior to bottling.
