Why the winemaker recommends Castel Sallegg Pinot Nero Alto Adige DOC
Alto Adige is the land of choice for Pinot Nero. Just a hint of tannins, lots of freshness and distinct flavors and aromas of small red fruits. The 14 degrees also give it an adequate body. Very good.

Nothing to envy to the more famous ones from beyond the Alps, except, perhaps, an excess of alcohol (14% is a lot) that overwhelms the red fruit:
This pure Pinot Nero is one of the many products of this company that overlooks Lake Caldaro. A discreet product with medium aromas whose 12 months in barriques give a combination of blackcurrant, raspberry, pepper and vanilla. Even in the mouth it is fine and medium-structured where it is dry and fresh. Good persistence without blunts. It lacks body and refinement but overall it is enjoyable and straightforward
Recommended pairings for this red wine Trentino Alto Adige DOC
With beef tartare; grilled tuna; meat in sauce or roast; game; and hard cheeses.
Uncork and serve at a temperature of 16 and 18°C in a Balloon glass.
