Why I suggest Langhe DOC Nebbiolo
An aristocratic wine.
The Sommelier: Obtained from grapes of the Nebbiolo d'alba 100%. At the sight of a deep ruby red colour, limpid and consistent. The nose is delicately spicy with hints of vanilla. In the mouth it is dry, of good body, rightly tannic. The persistent finish.
Combinations recommended: Polenta, Crostini with truffle, Stewed and braised meats, mixed Boiled meat, Roasts, Fondue with truffles, goat cheeses, blue cheeses, Parmesan,
Uncork and decant before serving at a temperature of 18°C in the chalice, the Grand Ballon.
