The oenologist recommends Paolo Scavino Barbera d'Alba DOC 2021 aged in carats
A super Barbera d'Alba, which has surprisingly maintained all its characteristics after 20 years from its collection. Really nice ... medium-high acidity good balance and structure that pairs beautifully with hard cheese and salad to be followed with a rich, homemade San Marzano tomato sauce. I grabbed two bottles with the intention of leaving the 2nd in the cell, but this particular vintage might even make a nod quite late.
Characteristics of the Barbera wine:
Barbera d'Alba, Piedmontese red wine with a characteristic ruby red color with violet hues, presents itself to the nose with an intense and complex bouquet of fruity aromas, with hints of blackberry, plum and blueberry and light spice notes on the finish. With a full and enveloping flavour, with good structure and freshness.
Recommended pairings with Barbera wine:
Barbera d’Alba DOC Affinato in carati 2021 Paolo Scavino with an exceptional Bolognese with veal, lamb and beef ragù.
Uncork and decant Barbera d’Alba DOC Affinato in carati 2021 Paolo Scavino before serving at a temperature of 16 ° C in a large Ballon glass.
Paolo Scavino Cellar:
… 1921 in Barolo in Castiglione Falletto. Farmers lent to agriculture for a hundred years, a true family passion. Errico Scavino, heir, began as a young man to walk in the footsteps of the founders.
