Why I suggest Champagne Cuvee Speciale Brut Alexandre Filaine
Finally I can try it, it was so much that this champagne from Filaine was in the viewfinder, assembled with 30% Chardonnay, 25% Pinot Meunier and 45% Pinot Noir grapes all coming from the Vallée de la Marne with the addition of 20% of the wines of reserve. Aged for at least 36 months on the lees and dosed 5g / l at disgorgement, it opens beautifully to the nose with chalky, mineral and citrus notes, in the mouth it is fresh, very clean and elegant with a straight and captivating drink, really liked.
The Sommelier: Very fine perlage that reveals a not very recent disgorgement. Insanely balanced wine, pulpy and full-bodied, three-dimensional, round in profile and juicy at the entrance. It offers a perfectly ripe sweet fruit on the medium palate that becomes more and more crunchy as it reaches the late palate. Delicately tight finish guided by a chewy and brothy acidity that plunges into an astringency of pink grapefruit. Breathtaking nose with bubble blower, deep iodine, beeswax and toasted chocolate grain.
Very fine perlage that reveals a not very recent disgorgement. Complex nose, a toasted note immediately emerges, the fruity dance between red citrus and ripe yellow apple, a beautiful floral note and minerality that turns on the wet rock. In the mouth it is really layered and deep, the approach is of fresh maturity, pulpy but agile, very savory. The bubble is super creamy and contributes to an out of the ordinary presence and pleasantness, for a wine of such complexity. Great correspondence and persistence.
