Why I suggest Grande Réserve Brut Champagne Premier Cru Vilmart & Cie
Certainly a very interesting base for this maison. Perfect style of cleanliness and precision with a classic and very drinkable background. Well done Champagne, perhaps due to the presence of Pinot Noir that makes me feel immediately pleasant.
The Sommelier: Montagne di Reims, a champagne that focuses on freshness, straw yellow but with strong golden reflections and an abundant and fairly “raw” bubble. Immediate hints of fruit, pear, peach but at the same time the softness of the yeasts and bread crust. Drunk 3 years after degorgement, good maturation but very fresh despite the fact that the acidity is not so present. Malolactic fermentation and aging of 10 months in large oak barrels give a good balance between freshness and complexity.
Recommended pairings: Excellent Champagne Grande Reserve Brut Premier Cru Vilmart & Cie throughout the meal; perfect as an aperitif, with seafood and land appetizers.
