The winemaker recommends this monumental version as it embodies the perfect synergy between stainless steel fermentation and long aging in small French oak barrels. The grapes, harvested from twenty-year-old vines rooted in clay-heavy soils, undergo a night pre-fermentation maceration to extract maximum varietal wealth. The subsequent 16-month aging on the fine lees with constant battonage grants the wine a creamy complexity and exceptional aromatic stability. According to the estate, Fumé demonstrates how the structural richness of wood can seamlessly integrate with a vibrant Alpine acid drive, offering a deep, enveloping sip free from sharp harshness.

The Terroir and the 2023 Vintage of Schloss Englar
The climate of the 2023 vintage bestowed a magnificent acid tension and tailored aromatic richness to the Sauvignon Blanc, enhanced by the experience that binds the history of great Italian wines to the passion of local families. Production comes to life from an accurate manual harvest and a night maceration on the skins. Fermentation is activated by indigenous yeasts and carried out half in stainless steel tanks and half in premium French oak tonneaux, followed by a 16-month aging on the fine lees with malolactic fermentation and constant battonage. Every single bottle, produced in an extremely limited run of only 2,660 units, reflects the dedication of the winemakers who manage the estate with energy and foresight, offering consumers an authentic and memorable experience with every taste.
